In the highly contested, and highly numerous, ramen scene of Tokyo, where there are countless ramen shops, one Tonkotsu ramen shop has taken my affections and taste buds in 2025. After having eaten endless amounts of ramen actually, I now feel comfortable giving the title of “My Personal No. 1” to Hakata Nagahama Ramen Tanaka Shoten Honten. Why do I have such an unwavering passion for this ramen shop? Please allow me a moment to go into detail as to why I’m so passionate!
Stood outside the shop alone is thrilling enough for me! Despite being a little bit of a trot from the station, the constant human traffic in and out of its doors doesn’t lie – this is something special. There is parking, but it often gets full due to its massive popularity. But these, too, are a pleasurable part of the “pilgrimage” to this holy ground.
Once inside, you will be greeted with a Divine heavenly to-die-for intoxicating scent of Tonkotsu (pork bone) broth that is robust, but NOT too-heavy-hitting. God, it feels like a blessing, like a tease of what’s to come, something blissful. The high energy, the staffs’ super enthusiastic shouts, the happy faces lost in ramen wonderland alone generate the adrenaline, OTT level of excitation. The unexpectedly fast closing is more evidence of the shop’s appeal and skill.
When you order at Tanaka Shoten, it’ is not about a mere transaction, but rather a sacred “ritual” to literally make your perfect bowl. You wait in line and a skilled staffer orders you around. The base of them is of course the “Ramen”. You can customize with the topping “NEG” (green onion) like you add egg or “CHACHU” (pork) for extra toppings.
The next part of Hakata ramen is the soul: noodle firmness. There are 4 options: Harigane (wire-hard) if you want to get a strong chew, Barikata (very hard) to get a satisfying snap, Futsuu (regular) to have a consistent chew, and Kata (hard) to have a nice balance. It utterly transforms the personality of the ramen you build! 4) If you are deciding what noodle style to get based on how you feel, or what goes best with the soup, it can be the happiest moment of the experience. Barikata is highly recommended if you’re a first-timer, though one of the great pleasures of the place is discovering your golden ratio after multiple visits.

First, take a sip of the soup with your renge (soup spoon). Ah, this is it! This is the Tonkotsu utopia I’ve been searching for! Simmered with love for hours, the soup is a crystallization of umami extracted from the very marrow of the pork bones. It has a rich, velvety texture, yet the aftertaste is surprisingly clean. The deep, full-bodied koku (richness) and a subtle sweetness layer upon each other on your tongue, seeping into your very being. There isn’t a hint of unpleasant gaminess, only wave after wave of profound umami.
Next, slurp the noodles. The ultra-thin, straight noodles, brought directly from Hakata, cling perfectly to the soup. Ordered “Barikata,” they offer a light, crisp, “patsun, pokipoki” texture that maximizes the soup’s deliciousness. This noodle-soup combination is a meticulously calculated golden ratio!
The Chashu, though a supporting act, has a starring presence. Prepared with care, it’s moist and tender, locking in the meat’s savory goodness. The crunchy texture of the kikurage (wood ear mushrooms) provides a fantastic contrast.
But the true, awe-inspiring power of Tanaka Shoten begins now: the infinite universe known as “Ajihen” (flavor changing)! Awaiting your command on the tabletop are fragrant “Goma” (sesame seeds), the electrifying “Karashi Takana” (spicy pickled mustard greens – use with caution!), refreshing “Beni Shoga” (pickled red ginger), and the powerful “Kizami Ninniku” (chopped garlic) for when you need a punch. By wielding these condiments, one bowl of ramen transforms, not just seven ways, but infinitely.
Furthermore, should you dare to taste the forbidden fruit, the “Aka Oni” (spicy minced meat), your soup will morph into a savory, spicy lava! Dipping your noodles into it, tsukemen (dipping ramen) style, will unleash a new wave of感動 (kandō – deep emotion/impression).
And, of course, you must not forget the “Kaedama” (noodle refill). Once you’ve devoured your first bowl in a flash, shout without hesitation, “Kaedama, Barikata de!” The fantastic Kaedama ticket system is yet another reason you’ll find yourself returning again and again. A fresh batch of noodles is plunged into your remaining soup, and the blissful time begins anew. This is the culture of Hakata ramen, and it’s the ultimate entertainment Tanaka Shoten offers.
The reason I chose Tanaka Shoten as my No. 1 for 2025 isn’t just because it’s delicious. It’s because it offers an “experience” called ramen – one that electrifies and brings happiness to everyone who visits. I urge you to make the journey and experience this soul-shaking bowl for yourself!
